Zucchini Fritters

  • 3 medium zucchini, grated and very well drained (use a tea towel to squeeze out liquid)
  • 1 egg
  • ¾ cup plain flour (extra if mixture is too wet)
  • 2 spring onions, sliced
  • 2 tbs finely chopped parsley
  • 1 tbs dried mint
  • 1 tsp salt
  • 1 tsp sumac
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 cup mozzarella
  • Chris’ Traditional Hommus Dip


  • Place everything except dip into a bowl and combine very well
  • Heat a non-stick fry pan and place balls of mixture into the pan pressing down to flatten them
  • Cook for a few minutes each side until browned
  • Serve with hommus, and drizzled olive oil with extra sumac
