Spicy Chicken & Green Slaw Soft Tortillas

Spicy Chicken & Green Slaw Soft Tortillas  With Chris’ Down 2 Earth Mexican Style Bean & Corn Salsa

Serves 6

Ingredients:

Spicy Chicken

  • 3 skinless chicken breasts
  • 1 packet Mexican Taco seasoning
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh coriander

Green Slaw

  • ½ small savoy cabbage, finely shredded
  • 4 celery stalks finely chopped
  • 1 Lebanese cucumber, halved lengthways, deseeded, thinly sliced
  • 1/3 cup olive oil
  • Juice of 2 lemons
  • 1 tablespoon white sugar
  • 1 garlic clove, chopped finely

To Serve:

  • 1 190g tub Chris’ Down 2 Earth Mexican Style Bean & Corn Salsa
  • 1 tub light sour cream
  • 12 soft corn tortillas

Method:

  1. Combine cabbage, celery and cucumber in a large bowl
  2. Whisk oil, lemon juice, sugar, garlic, salt and pepper together in a bowl until well combined. Spoon dressing over salad and toss to coat
  3. Cut chicken breast into bite sized pieces
  4. Heat a large non-stick fry pan over a medium high heat, adding olive oil
  5. Add chicken to the fry pan and cook until lightly browned
  6. Coat the chicken with the Mexican Taco seasoning and continue to fry until the chicken is cooked through
  7. Remove chicken from the heat and garnish with the fresh coriander.
  8. Warm soft tortillas according to package directions
  9. Spoon a generous amount of chicken in the centre of each tortilla. Top each with the green slaw
  10. Decant the Chris’ Down 2 Earth Mexican Style Bean & Corn Salsa and sour cream into small bowls and serve alongside the Spicy Chicken Tortillas
