Mexi Salad Bowls

We’re all trying to be a little healthier at this time of year, so with that in mind, we’re adding this Mexican Salad Bowl to our weeknight meal routine!

Ingredients:

  • Chicken breast stir fry strips
  • Mexican seasoning
  • Olive oil
  • Cos lettuce
  • Shredded carrot
  • Sliced cucumber
  • Chopped roma tomatoes
  • Grated low fat tasty cheese
  • Wraps (optional)
  • 1 tub Chris’ Traditional Tzatziki Dip
  • Lime wedge to serve

Method:

  • Heat a small amount of olive oil in a fry pan and cook the chicken strips until golden and cooked through. Coat the chicken evenly with the Mexican seasoning
  • In a bowl, arrange all of the ingredients together
  • Serve while the chicken is warm with Chris’ Traditional Tzatziki Dip, a lime wedge and some wraps (optional)
  • Enjoy!
