Corn Chowder

cornchowderIngredients:

  • 1 400g can of corn kernals, drained
  • 1 red onion, diced
  • 1 litre chicken stock
  • ¼ cup olive oil
  • 1 tub Chris’ Traditional Corn Relish
  • 1 tbs plain flour
  • Chives and black pepper to serve

 Method:

  • Place oil and onion into a heavy based saucepan and sauté for 10 minutes until onion is translucent
  • Add corn and sauté for a further 2-3 minutes
  • Add chicken stock, corn relish and plain flour, simmer for 30 minutes stirring occasionally
  • Top with chives and pepper and serve!
