Serves 2

maccheese1 (4 of 4)Ingredients:

  • 170g macaroni pasta, dry
  • 1 tsp salt
  • 1 cup mozzarella
  • 1/3 cup Chris’ Traditional Cheese and Chive Dip
  • 70g chorizo, diced small
  • 1 tbs plain flour
  • 3 tbs olive oil
  • 1 ¼ cup milk
  • Big pinch of salt
  • Spring onions to garnish

Method:

  • Cook the dry pasta in boiling water with the 1 tsp of salt according to the directions on the packet
  • While the pasta is cooking, place chorizo and olive oil into a saucepan, stirring for a couple of minutes until the chorizo is fragrant
  • Add in the flour and quickly mix
  • Then add the milk in and mix until smooth (if there’s a few lumps, don’t worry)
  • Add in the mozzarella, Chris’ Cheese and Chive Dip, and a pinch of salt to taste, combine well
  • Once pasta is cooked al dente, drain and put into the pan with the cheese mix and combine well
  • Place the macaroni and cheese into a baking dish and garnish with spring onions then place under the grill until the top is golden brown
  • Dig in!
