Kumara and Red Apple Soup

Serves 2

Ingredients for the soup:

  • 2 small-medium sized kumara (orange sweet potato) – approximately 450g, peeled and roughly chopped
  • 1/2 red onion, peeled and roughly chopped
  • 1 red apple, washed, seeds removed and roughly chopped
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 2 cups vegetable stock
  • salt and pepper, to taste
  • 2 tbsp Chris’ Traditional Spring Onion Dip
  • 2 tbsp crispy cannellini bean croutons (see below)

Method:

  • Preheat the oven to 200 degrees Celsius.
  • Place the kumara, red onion and red apple into a shallow baking tray lined with grease- proof paper.
  • Drizzle over the oil and sprinkle with sea salt, then toss to coat. Arrange the vegetables in a single layer, then bake for 30- 40 minutes, turning occasionally to ensure even browning. Do not turn off the oven.
  • In the meantime, prepare the crispy cannellini bean croutons (see below).
  • When the vegetables are soft, transfer them to a medium- sized saucepan and add the vegetable stock. Heat uncovered over high heat until boiling, then cover and reduce heat to low. Cook for a further 15 minutes.
  • Allow to cool for 5 minutes, then use a stick blender (or carefully transfer to a regular blender) and blend until smooth. Season to taste with salt and pepper.
  • Return to the boil before serving. To serve, top with 1 tbsp each of dip and cannellini bean croutons. Enjoy.

Ingredients for the cannellini bean croutons:

  • 425g tin of cannellini beans, drained, rinsed well and patted very dry
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt

Method:

  • Lay the dried cannellini beans in a single layer on a baking tray lined with grease-proof paper. Drizzle with olive oil and sprinkle with sea salt, then toss to gentle coat. Bake at 200 degrees Celsius for 30 minutes, turning occasionally to ensure even browning.
  • Enjoy while hot – these become a little chewy when cool.
